Crystallised Ginger Recipe.

The crystallised ginger prepared by our Ayurvedic Lifestyle Consultant students underwent quality assurance by Ayurvedic practitioners Karin and Roberta. 😋

Crystallised Ginger 🫚 🔥

Ingredients:

* 500 g fresh ginger
* 500 g coconut sugar
* Water

Instructions 🧑🍳👩🍳

1. Peel the ginger and cut it into 3–5 mm slices.
2. Place the ginger in a pot and add enough water to cover it.
3. Bring to a boil, then simmer for 30–40 minutes, or until the ginger is soft.
4. Drain the ginger, reserving the cooking water.
5. In a clean pot, combine:
* the cooked ginger
* ½ cup of the reserved ginger water
* the raw sugar (adjust to taste; less sugar can be used for a milder sweetness)
6. Stir well and add ½ cup of water.
7. Bring to a boil, then simmer for about 50 minutes, stirring regularly throughout. The mixture will become slightly caramelised.
8. Spread the ginger pieces on an oven tray to dry.
