Ayurvedic Dalia (broken wheat) recipe

Last week our beautiful ALCC students prepared this Vegetable Dalia recipe in the Lakshmi kitchen as part of their practical hours. And lucky for us, the Lakshmi staff, we got to be recipes testers 😋 … We loved it so much, we thought we’d better share it with you all.

Ayurvedic Vegetable Broken Wheat (Dalia)

Ingredients

  • 1 cup broken wheat (dalia) 
  • 1 tbsp ghee 
  • 1 tsp cumin seeds 
  • ½ tsp grated fresh ginger 
  • ¼ tsp turmeric powder 
  • A pinch of asafoetida (hing), optional 
  • 1 small carrot, finely diced 
  • * ¼ cup green peas
  • * ½ cup zucchini or bottle gourd, diced
  • * 4 cups water
  • * Salt to taste (preferably rock salt)
  • * Fresh coriander leaves for garnish
  • * A squeeze of lemon (optional)

Instructions

  1. Dry roast the broken wheat in a pan for 3–4 minutes until lightly fragrant.
  2. Heat the ghee in a pressure cooker or saucepan.
  3. Add cumin seeds. Once they splutter, add ginger and asafoetida. 
  4. Stir in the turmeric and vegetables. Sauté for 2–3 minutes.
  5. Add the roasted broken wheat and mix well.
  6. Pour in the water and add salt.
  7. Cook:

* Pressure cooker: 2–3 whistles. 

* Saucepan: Simmer for 20–25 minutes, stirring occasionally, until soft. 

  • 8. Garnish with fresh coriander and, if desired, a little lemon juice before serving.

Ayurvedic Tips

  • For Vata: Add a little extra ghee, use warming spices like cinnamon or black pepper, and serve warm.
  • For Pitta: Reduce ginger and black pepper, and include cooling vegetables like zucchini. Avoid too much chilli.
  • For Kapha: Add more ginger, black pepper, and a pinch of cinnamon. Use less ghee and include plenty of vegetables.

You can also make it into a sweeter Ayurvedic breakfast by cooking the broken wheat with water or milk, adding cardamom, cinnamon, soaked raisins, chopped dates, and a few almonds or walnuts, without refined sugar. Let us know in the comments if you try it
