After reading our yesterdayβs post about Winter Melon, we hope you feel inspired to make this delicious Ash Gourd recipe π«Ά Ayurvedic Ash Gourd (Winter Melon) Curry π Benefits (Ayurvedic perspective): π₯ Vata & Pitta balancing β cooling and hydrating π₯ Digestive aid β light and easy on the stomach π₯ Detoxifying β supports kidney and liver function π₯ Relaxes the mind, sattvic in nature Ingredients: β’ 2 cups ash gourd, peeled and cubed β’ 1 tbsp ghee β’ Β½ tsp cumin seeds β’ Β½ tsp fennel seeds β’ Β½ tsp coriander powder β’ ΒΌ tsp turmeric powder β’ 1 small piece ginger, grated β’ Salt to taste β’ 1β2 cups water β’ Fresh coriander leaves for garnish Instructions: 1. Heat ghee in a pan, add cumin and fennel seeds. Let them sizzle. 2. Add ginger, sautΓ© lightly for a few seconds. 3. Add ash gourd cubes, turmeric, coriander powder, and salt. Mix gently. 4. Add water, cover, and simmer on low heat for 15β20 minutes until soft. 5. Check seasoning, garnish with fresh coriander leaves.
