    Yummy yummy poha

    A very simple but so delicious Poha recipe


    If you haven’t cooked Poha before we would highly recommend you to try.


    Poha, or flattened rice, is a common Indian dish that is often prepared for breakfast or as a light meal. It's made by parboiling rice and then flattening it into thin flakes. Poha is typically cooked with various ingredients like vegetables, spices, and nuts.


    1. Nutritional Value: Poha is a good source of carbohydrates, providing energy to the body. It's low in fat and naturally gluten-free. It also contains some protein and fiber, which can help with satiety.


    2. Nutrient Enrichment: you can enhance the nutritional value of poha by adding vegetables, nuts, and spices.


    Easy Poha recipe: 


    Ingredients

    1.5 cups of poha

    1/2 red onion finely chopped

    2 green chillies finely sliced

    2 sprig of curry leaves

    1/2 sweet potato finely chopped

    1/2 cup of dry roasted cashew nuts

    1 tsp of black mustard seeds

    1 tsp of cumin powder or seeds

    1 tsp of black cumin seeds

    3/4 - 1 tsp of turmeric powder

    Salt as per taste

    1 small lemon squeezed

    Olive oil or ghee to sauté the spices

    2-3 tablespoons of fresh chopped coriander leaves

     

    Method of preparation

    1. Rinse the poha with 4-5 cups of water, add small amount of salt and set aside

    2. Dry roast the cashew nuts and put them aside.

    3. Heat ghee or olive oil, sautéed the spices, add the onion, sauté until they are soft

    4. Add the sweet potato, green chillies and shredded curry leaves

    5. Add the poha and gently stir

    6. Top with the cashew nuts

    7. Apply the lid and steam for 1-2 minutes

    8. Add the fresh squeezed lemon juice

    9. Garnish with fresh coriander

    10. Sit down, relax, inhale, exhale, and give thanks to the universe providing us with all this.
