This bumpy veggie often gets looked over by most people. But there are many reasons why you should try it!

Bitter gourd is, as its name suggests, quite bitter in taste. From an Ayurvedic perspective, the bitter taste is great for balancing both Pitta and Kapha Doshas.

The benefits of this vegetable include blood purification and as a result, are great for treating a variety of skin conditions.

Many people will toss the chopped bitter gourd in salt and let it rest for an hour before cooking to remove the bitter flavour. However, make sure to use minimal salt! It is important to taste a bit of that bitter flavour.
