    Kerala Banana Leaf Cake Recipe
    Last week we posted about the different usages of banana leaves.

    We used it for the unique Ayurvedic treatment called Thalopothichil, as a dining plate and to make a banana leaf cake.

    The cake was so delicious and we would like to share our recipe for this. 

    Close your eyes and imagine the flavour of shredded coconut, coconut sugar, cardamom and rice flour pudding all together melting in your mouth. ☺️

    A sensation of Madhura Rasa (sweet taste). This is what the Banana leaf cake taste sensation will be like. 

    Kerala Banana leaf cake 

    This recipe is best suited for Vata and Pitta. It is grounding and nourishing in nature.

    Ingredients

    Banana leaf for wrapping (double square)

    1/ 2 cup rice flour or finger millet (ragi) 

    1/4 cup coconut sugar 

    1/2 cup grated or desiccated coconut 

    1/4 tsp of cardamom powder 

    1/4 tsp of cumin powder 

    Optional small handful of raisins 

    pinch of salt 

    water as required 

     

    Directions: 

      1. Heat the coconut sugar with 1 tablespoon of water 

      1. Keep your stove at a very low flame 

      1. Add other ingredients and mix well. 

      1. Keep the mixture aside 

      1. In a bowl add the rice flour and add boiling water, just enough to make a soft dough 


    best to stir with a wooden spoon or use your hands for this. 

      1. Place about a plum size in portion on the banana leaf and flatten it with your fingers. 


    add about one tablespoon of the prepared filling on top of it. (check out our video) 

      1. Fold the banana leaf and press it together 

      1. Place in a steamer for about 10 minutes 


    Enjoy while still warm
