This is one of our favourite Indian snacks, so delicious .
Semolina cake, in southern India this is called rava kesari (San). It is often made as a religious offering and as a festival sweet.
Ingredients 1 1/2 cups semolina 3/4 cup jaggery or brown sugar 4 tablespoons ghee 1 tsp cardamom powder 1-2 tablespoon raisins (if you add 2 tablespoons you can reduce the amount of sugar) 1-2 tablespoon cashew nuts fried 1 cup water
Preparations 1. Heat 2 tsp of ghee and roast the cashew nuts and raisins until golden brown. Transfer into a bowl and keep aside. 2. To the same pan add 2 tsp ghee and roast semolina for about 3 minutes in medium heat till the semolina gets lightly browned. Transfer it to a plate and keep aside. 3. Now add water to this pan and bring it to boil. On boiling, add sugar. Stir and cook to make it syrupy. 4. To this, slowly add semolina and allow it to get cooked. Keep stirring 5. Now add the remaining ghee and keep stirring until the mix no longer stick to the pan 6. Add the cardamom powder roasted cashew nuts and raisins. 7. Mix well and spread the entire mixture evenly on small greased baking tin. Once it is set cut into slices. 8. Your cake is ready to enjoy. 9. So delicious with a cup of Chai tea
Note: Grapes are known as draksha in Sanskrit. It is considered to be the best among all fruits. It promotes eye health, it is sweet, cooling and unctuous. It pacifies vata and pitta. Grapes are widely used for herbal medicines to reduce thirst, cough, fever in formulations such as Drakshadi kashayam or Drakshadirishtam.
