A delicious and beautiful bright red, aromatic and mildly spiced dish.
Ingredients 3 Medium sized beetroot 2 medium sized potatoes diced 2 onions finely chopped 2 tomatoes finely chopped 1/2 inch ginger sliced 2 cloves garlic and peeled and sliced (optional) 1 tsp of cumin seeds
1/2 tsp chilli powder 1/2 tsp coriander powder 1/2 tsp garam masala powder 1 sprig coriander leaves finely chopped 1 can of coconut milk 3 tablespoon of ghee Salt to taste
Preparation Cook or steam the diced beetroot and potato add a pinch of turmeric and salt. Keep aside Heat the oil in a deep pan and sauté cumin seeds, add ginger, garlic and onions. Sauté well until the onion are golden brown Add chilli powder and other spices, sauté for another minute Add chopped tomatoes Add the cooked beetroot and potatoes Add the coconut milk, bring to boil and stir well for another few minutes Garnish with coriander leaves
Enjoy with rice or chapati
Beetroot is an excellent source of fibre, iron, manganese, potassium and folate. It is believed that beetroot can lower blood pressure, has anti inflammatory and anti cancer properties.
