    Jaggery in a freshly brewed chai - absolutely delicious ☕️

    When used in moderation and correctly, Jaggery can provide benefits to the consumer. Compared to white sugar, Jaggery is an unrefined by-product of sugarcane. It is used in many Ayurvedic formulations including lehyams, asavams and arishtas 

    Jaggery is sweet, heavy and strengthening in nature, making it great for treating excess Vata and Pitta, but potentially increasing for Kapha dosha. It can be used to improve taste ? can be used in anaemia, improve burning sensations in the body and can be useful in urinary tract conditions.

    According to the classical text the Ashtanga Hridaya in Chapter 5, verse 47:

    “Guda (Jaggery) washed well does not cause a great increase of slesman (Kapha) (Causes slight increase) and helps easy elimination of urine and faeces.”

    As the quote mentions, old jaggery is better than fresh jaggery.

    The sweet taste is called Madhura in Sanskrit ? Sweet is one of the 6 tastes, called Shad Rasa, in Ayurveda. The other tastes are sour, salty, pungent, bitter and astringent.

    Ayurvedic nutrition explains the importance of having all six tastes in one’s diet. Depending on the needs of each person, the proportion of tastes will vary.
