Beetroot curry – Cukamdar kari (Hin)

A delicious and beautiful bright red, aromatic and mildly spiced dish.

Ingredients
3 Medium sized beetroot
2 medium sized potatoes diced
2 onions finely chopped
2 tomatoes finely chopped
1/2 inch ginger sliced
2 cloves garlic and peeled and sliced (optional)
1 tsp of cumin seeds
