Drumstick Curry

Today is Drumstick tree curry day 🌿

In southern part of India this is called muringakol kari 🍛

Drumstick has been used in India since ancient times and it has been documented in the Vedas. 📖
Drumsticks or Moringa pods are
🌿highly nutritious, being a rich source of vitamin C, as well as calcium and iron.
🌿They are also a good source of dietary fibre.
🌿The are exceptionally good for your eye health and the nervous system.
🌿The drumstick pods are very useful in treating disorder of liver, spleen and pancreas it is also good for your bone health and joints.
🌿It is also used to treat intestinal worms and improves digestion

It alleviates Vata and Kapha. People with gastritis, burning sensation and sensitive stomach should avoid this vegetable in excess.

🌿🌿💖Food is Medicine 💖🌿🌿

Ingredients
6 drumsticks cut in to 4cm long pieces
1 chopped tomato 🍅
2 red onion sliced
1 sprig coriander leaves chopped
1 sprig mint leaves chopped 🌿
1 tsp coriander powder
1/4 tsp chilli flakes
1/4 tsp turmeric powder
1/4 tsp cumin seeds
1/4 tsp masala powder
1 1/4 cups of water 💦
2 tsp of ghee 🧈
1 cup of coconut milk 🥛
2 tablespoons of cashew nut paste (grind cashews and add a small amount of water)
salt to taste

Follow the simple steps 👩🏻‍🍳 👨‍🍳
1. Heat the ghee in a deep frying pan and sauté the cumin seeds
2. Add the onions and sauté until they become soft 🧅
3. Add the tomatoes 🍅 and sauté further
4. Add the chilli powder, coriander powder, turmeric powder, garam masala and pepper powder. Sauté well for another 30 seconds (careful not to burn the spices)
5. Add the drumstick pieces and mix well
6. Pour 1 1/4 cups of water and cover the pan with a lid, cook until the drumsticks become soft and succulent on the inside
7. Add cashew nut paste and coconut milk
8. Garnish with coriander leaves and mint leaves.
9. Enjoy with rice or a flat bread.
