Hmmh what to do with Mulberries?
Lily and Elva voted for a cake.

Some advice, please give your children an apron if you have some little helpers in the kitchen. It could get messy 🙂

Let’s get started

Pick 3 cups of Mulberries, rinse them, dry any extra moisture with kitchen towel.

Ingredients

Base
* 1 1/2 cups plain flour

* 150 g unsalted organic butter
* 1/4 cup of coconut sugar

Mix all the ingredients to make a dough, spread on the base of the dish. Bake for 15 minutes on 180C, until golden brown.

Filling
* 3 cups mulberry fresh stems trimmed
* 1/4 cup plain flour
* 1/4 cup of coconut sugar

Mix 3/4 of the mulberries, flour and coconut sugar in a food processor. Pour over the base, then spread the remaining mulberries on top

Topping
* 2 eggs
* 1/4 of coconut sugar
* 2 cups desiccated coconut

Mix all the ingredients until well combined, sprinkle over the cake and lightly press it down.

Bake for 20 minutes until golden brown – Enjoy )
